Wandering aimlessly through alleys and alleys of cheese storage, you will eventually spoil your palate with different ageings of it!

Traditional balsamic vinegar is what identifies Modena best. For over two thousand years, wooden barrels featuring this most delicate, thick syrup have been preserved in the attics of palaces in town. Acetaias and balsamic production are still a most secretive family tradition, here, rarely spoken of. We will reach a stunning 1920s art dèco villa just outside Modena, where I will share all of the secrets of traditional Balsamic Vinegar making, and you will finally treat yourself with all of the different ageings of it.
