For over two thousand years, wooden barrels featuring this most delicate, thick syrup have been preserved in the attics of palaces in town. Acetaias and balsamic production are still a most secretive family tradition, here, rarely spoken of. We will reach a stunning 1920s art dèco villa just outside Modena, where I will share all of the secrets of traditional Balsamic Vinegar making, and you will finally treat yourself with all of the different ageings of it.
